Eggy yumminess.

Ingredients
3 T extra virgin olive oil
1 onion (sliced)
1 large red bell pepper (thinly sliced)
1 small hot chili (jalapeƱo, serrano) (thinly sliced, no ribs)
3 clv garlic (sliced)
1 1⁄2 T smoked paprika
1 t cumin
28 oz can whole peeled tomatoes (hand crushed)
1 large handful minced cilantro
4 eggs
  sliced cured black olives (for serving)
  feta (for serving)
  artichoke hearts (for serving)
  crusty bread (for serving)
Instructions

Fry onions and peppers on high till partially charred. Add garlic, bloom spices. Add tomatoes, simmer 10 min, season salt and pepper, add 1/2 cilantro. Form wells, break eggs into well. Spoon some sauce over eggs white, cover with salt, cook 5-8 min until eggs are barely set. Sprinkle toppings.
