These are great and hold together well. The toppings are what make it fun. Make a bunch to freeze ahead.
Ingredients
2 cn black beans (drained and rinsed)
1 onion (minced)
2 carrots (shredded)
3 garlic cloves (minced)
2 T fresh cilantro (chopped)
1 T soy sauce
1 egg
1 T extra virgin olive oil
1 t cumin
1⁄2 t chili powder
1⁄4 t cayenne pepper
salt and pepper
flour (enough to thicken)
Instructions
Fry onions, garlic, salt, pepper, cumin, carrots, spices until tender. Remove from heat. Mash beans, add veggies and soy sauce, place in freezer 30 mins to set. Cook on med heat.
