Ingredients
2 bn beets (or 6-8 medium beets)
1 clv garlic
1⁄4 t salt
2 T red wine vinegar
1⁄4 t dijon mustard
9 T olive oil
Instructions
Preheat the oven to 400 degrees. Scrub clean, then wrap beets in foil and roast for 1 hour.
When tender, let the beets cool and trim them before slipping off their skins. Slice beets and set aside.
In a bowl, mash garlic and salt together before adding the other ingredients in the order listed.
Pour vinaigrette over the beets and stir. Allow to chill in the fridge for a few hours before enjoying,
