Chia Pudding with Fresh Fruit and Coconut

Prep this the evening before to have four jars ready to go. Can stay in the fridge for up to 1 week.

Ingredients
2 c 1 percent low-fat milk (plus extra for serving)
1⁄2 c chia seeds
2 T maple syrup
1 1⁄2 t vanilla extract
1⁄4 t salt
2 c blueberries, raspberries, blackberries, sliced strawberries, and/or sliced bananas (10 ounces)
1⁄4 c unsweetened flaked coconut (toasted)
3 t cocoa powder (Optional)
Instructions

1. Whisk milk, chia seeds, maple syrup, vanilla, and salt together in bowl. Let mixture sit for 15 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 8 hours or up to 1 week. 2. Stir pudding to recombine and adjust consistency with extra milk as needed. Top individual portions with fruit and coconut before serving.
